Marinated Tofu Wrap

vegan marinated tofu wrap

This is one of my favorite quick and delicious meals for any time of day! Tofu can be tricky because it doesn't have much taste on it's own, but this marinade adds tons of flavor. It can be marinated for a few hours or overnight (I've even left it 2 days). Then just throw it in a wrap with whatever else you want to add!

 

Ingredients

Marinade

  • 1 block extra firm tofu

  • 1/4 cup soy sauce

  • 1 Tbsp maple syrup

  • 1 Tbsp oil of choice

  • 1 Tbsp rice vinegar

  • 1 Tbsp corn starch

  • 2 tsp garlic powder

  • 2 tsp mixed spices (I use 21 Seasoning Salute from Trader Joe's)

To Assemble

  • 1 wrap of choice (I use flour tortilla)

  • 1/2 an avocado- mashed

  • Handful of leafy greens (spinach, spring mix, kale, arugula, etc.)

  • 1/2 cucumber or sautéed zucchini- cut in strips

  • 2 Tbsp basil/sun-dried tomato spread

    • Just blend a big handful of basil with 1/4 cup sun-dried tomatoes (with some oil from the jar)

  • Any other veggies you'd like to add!

Instructions

Prep a few hours earlier or the day before

  1. Press tofu ahead of time. I have a Tofuture press that makes it super easy and removes all the excess liquid.

  2. Slice tofu block in half length-wise so you end up with 2 flat rectangles

  3. Mix all the marinade ingredients into a baggie.

  4. Put tofu halves into the baggie and lay flat, making sure each half is covered in marinade.

  5. Let sit in fridge for several hour, or overnight (flip bag over to make sure both sides are fully marinated).

When ready to eat

  1. Preheat oven to 400F.

  2. Take tofu out of the bag and slice into strips.

  3. bake tofu in the oven from about 15 minutes.

  4. Meanwhile, start of assemble your wrap.

  5. Spread mashed avocado onto your wrap.

  6. Follow with leafy greens, cucumber, and/or any other veggies you want.

  7. Add your desired number of tofu strips.

  8. Top with basil/sun-dried tomato spread.

  9. Roll it all up and enjoy!
