This is a staple meal that I make all the time! It's delicious and requires little prep. This involves my go to Mediterranean veggies; sun-dried tomatoes, artichokes, and Kalamata olives. I always have a storage of these in my house!
Pasta with Mediterranean Veggies & Vegan Sausage
Ingredients
Package of Orecchiette pasta
3 cloves garlic
¼ cup extra virgin olive oil
1 Field Roast Garlic and Fennel vegan sausage, sliced
½ zucchini, cut in quarters
¼ cup sun-dried tomatoes
¼ cup Kalamata olives
¼ cup marinated artichoke, cut in quarters
Handful of spinach
Salt, pepper, and spices to taste
Optional: vegan feta
Optional: any other veggies you like!
Instructions
Cook pasta according to package directions
Heat olive oil in skillet over medium-high heat
Add minced garlic and sauté for 2 minutes
Add sliced vegan sausage and zucchini
Sauté for 3 minutes
Add in sun-dried tomatoes, olives, artichoke, and spinach
Sauté for another few minutes, until spinach is cooked
Add cooked pasta to your veggie skillet and mix
Add salt, pepper, other spices to taste. You can add more olive oil (maybe from the sun-dried tomato jar for extra flavor)
Optional: Add vegan cheese on top and enjoy!
